Many ventures are born to sell food. Others become part of history and honorable cultural representations. Such is the case of FIESTA MEXICAN KITCHEN, the popular food truck founded by Veracruz-born entrepreneur Luis Galicia, whose pioneering presence in front of One Court Square in Long Island City has been part of the urban landscape for a decade.

From Veracruz to New York

Life has not been easy for Luis. At six years old, he and his three young siblings were left fatherless; his mother immigrated with the family to Mexico City, and after years of hard work and sacrifice, she managed to buy a small plot of land, where she built a very modest home without electricity or water. Those circumstances forged the resilient character that has accompanied Luis through every stage of his life.

At fifteen years old, Luis immigrated to New York, and like many newly arrived young people, he had to learn to fend for himself: cooking, washing his clothes, studying English, and working while building a future far from home. In 2004, he entered the restaurant industry; his first position was washing dishes, a humble job he performed with dedication. Over the next ten years, he worked his way through Tex-Mex, Greek, and Chinese kitchens, absorbing knowledge, techniques, and flavors that would later help him develop his own culinary venture. It was precisely that difficult period that changed his destiny.

The Beginning of a Dream

After being unemployed for two months and with a newborn daughter, Luis needed to find a way to generate income. Using his savings, he rented a small food cart in Astoria at night. While continuing to look for a job during the day, he ran the cart, and when business was slow in that location, he would move to Court Square in Long Island City looking for customers. It was then that a suggestion changed his life.

A customer mentioned to him that there was a lack of breakfast options in the area. The observation seemed simple, but to Luis, it was an opportunity. Instead of continuing to look for a job, he decided to create something of his own.

From the corner of 44th Drive and Jackson Avenue, Luis watched for years as the new residential towers went up, changing the neighborhood forever.

The First Food Truck in Court Square

In 2016, he bought a secondhand food truck in good condition and began selling breakfast in Court Square. At that time, when Long Island City was still undergoing the urban transformation that would turn it into one of the most dynamic neighborhoods, there were no food trucks in the area. Luis was the first food truck in the area, which is now filled with these types of businesses.

The first few months were difficult. "We had to win people's trust," he recalls. "Customers had to try the food, see that it was clean, fresh, and delicious." His daughter, Dulce, helped him by running the cash register during that initial phase, working without a salary and surviving on tips. Little by little, the business's reputation began to grow thanks to the exceptional quality of its food, making FIESTA MEXICAN KITCHEN the undisputed favorite of the entire area to this day.

The Secret: Extremely Fresh, Homemade, and Authentic Food

The success of FIESTA MEXICAN KITCHEN is not just based on a prime location. Its main strength is a simple philosophy: cooking every day with fresh ingredients and preparing each dish to order. "Nothing is canned. Nothing is precooked. Nothing is frozen," Luis explains.

Family seasoning plays an essential role. His wife, originally from Acapulco, is responsible for marinating the meats and providing the traditional flavors that set FIESTA MEXICAN KITCHEN’s dishes apart.

The menu combines Mexican classics with options adapted to New York tastes, a result of his years of experience working in different kitchens and observing his customers' preferences. In addition to tacos, burritos, and popular breakfast items, they offer fresh salads and vegetarian alternatives that reflect the city's culinary diversity. One of their most requested vegetarian tacos includes Mexican rice, grilled bell peppers and onions, homemade chipotle sauce, guacamole, queso fresco, and fresh pineapple.

During the winter, they incorporate comforting specialties like tortilla soup, lentils, and chicken noodle soup.

EMPRESA FAMILIAR

A FAMILY BUSINESS

FIESTA MEXICAN KITCHEN is a family business. Every member contributes something: Luis's wife prepares the marinades and traditional recipes; he cooks and personally serves many of the customers; his daughter runs the cash register; the staff has become family; and everyone plays a part in the growth of a business built on years of hard work and dedication.

This close connection has helped create lasting relationships with office workers, residents, and visitors who have made FIESTA MEXICAN KITCHEN a regular stop in their daily routine.

A New Chapter on Manhattan's UWS

Five months ago, Luis decided to take the next step. Driven by recommendations from friends and customers who know and appreciate his food, he opened a second food truck at Broadway and 72nd Street, one of the most iconic intersections on the Upper West Side (UWS). The area, known for its rich history, bustling activity, and connection to the 1, 2, and 3 subway lines, presents a completely different backdrop compared to Long Island City.

However, the philosophy remains intact. "Every neighborhood has its own dynamic and personality," Luis states. "But our food doesn't change. It is still fresh, delicious, made to order, and reasonably priced."

More Than a Food Truck

Luis’s story is that of many immigrants who arrived in New York with limited resources but with a tremendous will to succeed. What began as a small food cart rented out of necessity has become a brand recognized for its authenticity, its quality, and the warm, friendly service offered to everyone who stops by to try its dishes.

While FIESTA MEXICAN KITCHEN continues to be a staple in Long Island City, a new community is beginning to discover at Broadway and 72nd Street the same homemade flavors that won over Court Square for years.

Perhaps that is Luis’s true secret: not simply selling Mexican food, but sharing an authentic story of hard work, family, and tradition every single day.
